Mediterranean Salmon

 1 tbsp olive oil
 3 mixed peppers, de-seeded and sliced
 1 large red onion, thinly sliced
 400 g baby potatoes, unpeeled and halved
 2 tsp smoked paprika
 2 garlic cloves, crushed
 2 tsp dried thyme
 400 g can chopped tomatoes
 4 salmon fillets
 1 tbsp chopped parsley, to garnish
 Black pepper to season

Press the Sauté function and heat the oil in the cooker.

Add the peppers, onion and potatoes and cook, stirring regularly for a few minutes.

Add the paprika, garlic, thyme and tomatoes.

Close the lid and set the pressure release valve to closed. Press “Warm/Cancel” to cancel the Sauté function.

Choose Fish Function and adjust the timer for 5 minutes.

When the cooking is finished, Press “Warm/Cancel”. Perform Quick Release (refer to the user's manual) to release pressure. Open the lid and season the vegetables and lay the salmon on the top. Skin side down.

Put the lid back on and set the pressure release valve to closed. Choose Fish Function and adjust the timer for 3 minutes.

When the cooking is finished, Press “Warm/Cancel”. Perform Quick Release (refer to the user's manual) to release pressure. Open the lid and Scatter with parsley.
